Montignac Pear Flan

You can find this delicious and easy recipe on The Montignac Diet Cookbook at page 348 or you can just read it below :) .


  • 5 good-size pear
  • 1 vanilla pod 
  • 3 tbsp xylitol or sweetener of choice to taste
  • 3 eggs + 1 egg yolk
  • 250 ml milk
  • 150 ml creme fraiche ( I used low fat one )
  • 20 ml pear brandy or rum ( optional )
  • oil to coat the dish 
Preheat the oven at 200'C. Peal the pears, quarter and remove the cores. Slice the quarter into two and place them in an oiled flan dish.

In a large bowl beat together the eggs with the sweetener and the vanilla seeds. Add the milk and the pear brandy ( if using) to the creme fraiche and fold into the egg mixture.

Pour the mixture over the pears and cook in the oven for 40 to 45 minutes.
Serve cold .
