Warm Lentil and Grilled Halloumi Salad

Easy to make and is fantastic as a starter or main.

The ingredients are for 2 starter servings :

  • 1/2 cup of uncooked lentils 
  • 1 l of vegetable stock 
  • a handfull of black olives 
  • 6-7 cherry tomatoes halved
  • 1 crushed garlic clove 
  • 1 small red onion finely sliced 
  • juice from half a lemon 
  • 1 tbsp olive oil 
  • 1 tbsp chilly infused olive oil ( optional )
  • salt and pepper to taste
  • small bunch of coriander roughly chopped 
  • 250 gr halloumi 
To start soak the lentils for 30-40 min in cold water. Drain and boil them in the vegetable stock for about 20 min until tender. Add more water if necessary.

Meanwhile in a bowl toss the olives, tomatoes and onion. Add the crushed garlic, lemon juice and the oil.

Cut the cheese into chunks and grill until golden. Add the drained lentils to the salad with some salt and pepper and the coriander. Toss some more and top with the grilled halloumi.
