Delicious Fudgy Brownies

I got inspired by some brownie recipes on Pinterest today and I decided to bake a batch and they taste delicious.





For the recipe I used :

  • 150 g unsalted butter 
  • 1/2 cup cocoa powder
  • 2 tsp instant coffee
  • 3/4 sweetener ( I used a combo of stevia and xylitol )
  • 1 pinch of salt 
  • 1 tsp vanilla extract 
  • 4 medium eggs 
  • 1/2 cup almond flour 
  • 1/4 cup macadamia nut flour 
  • handful of sugar free chocolate buttons 
  • handful of raw hazelnuts 
First of all preheat the oven at 165 degrees Celsius. Line an 8"x8" baking pan with parchment and set aside.

In a bowl combine the butter, cocoa powder, the instant coffee, the sweetener and the salt. Microwave for about 2 minutes of high stirring every 30 seconds until slightly heated and smooth.

Stir in the vanilla and add the eggs, one at a time while whisking with a handheld mixer. The composition should be silky smooth.

Incorporate the flour and the chocolate buttons. If you can't find macadamia nut flour you can replace it with almond or hazelnut flour.

Pour the batter in the pan and add the hazelnuts.

Bake for 25-30 minutes. You want the brownies be gooey in the middle so try not to over bake it. To check it insert a toothpick that should get out almost clean.
